Organoleptic characteristics and suggested food pairings
Scent intense, wide with hints of notes of spices

Suggested food pairings excellent with tasty main dishes, white and red meat, wild game and grilled meat
Suggested serving temperature 18-20°C, uncorking it a little earlier

Production area
The Wine Chianti DOCG Bioitalia is produced on grounds which lie between 300 and 350 meters above sea level, of clayish nature , poor in organic substances. The position is in a steep slope and the exposure is south-easterly.

Vineyard and Vineyard management
Sangiovese 85%, Cabernet Sauvignon 7%, Merlot 5%, Canaiolo 3%
Vineyards recently planted. ( 2002 and 2006 ) at spurred cordon with 4200 vines per hectare, managed according to the method of organic farming ; in any case the soil used for the vineyards has been worked on according to the methods of organici farming since 1989. The pruning method is by spurred cordon. Production per hectare 70 quintals, equal to 3 kg per vine.

Manual picking of the grapes starting from September 20th on, crushing and destemming followed by maceration at a maximum temperature of 30 ° C for 8days, alternating remontage and delestage , racking and finishing of the fermentation in steel.
After the first decanting the wine is aged in steel for at least 12 months, then bottled and aged in bottle for another 3 months, then marketed.
