Organoleptic characteristics and suggested food pairings
Scent red fruit, completed by floral notes and light spices
Flavour dry and harmonious , having a slight bitter after taste
Colour vivacious ruby red with purplish nuances
Suggested food pairings salami hors d’oeuvres , tagliatelle with ragù, grilled meat
Suggested serving temperature 16-18°C


Production area

The Sangiovese wine DOC Bioitalia is produced on grounds between 300 and 400 meters above sea level, , mainly of sandy kind, poor in organic substances , derived from the break-up of sandstones . The grounds are in a slight slope and southly exposed

Vineyard and Vineyard management

Sangiovese 100 %
10 yrs old vineyards , planted by spurred cordon, with 3300 vines per hectare, conducted according to the method of organic farming from 1990. Production per hectare 100 quintals, equal to 3 kgs per vine

Vinification

Hand picking of the grapes starting from October 1st, then crushing and destemming followed by maceration for about 1 week. During the first 3 days remontages 3 times a day, racking and finishing of the fermentation in cement barrels.
It is decanted about 6 times and then stabilized.
Bottling at the beginning of the spring and ageing in bottle for about 6 months
